No-Added-Sugar Fruit-and-Nut Quick Bread (Crack thy dough): Fruits and nuts are always a great combination.
Ingredients: 2 medium ripe bananas, 2 large eggs, 1?4 cup canola oil, 2 cups oat flour, 1 tsp baking powder, 1?2 tsp salt, 3?4 cup chopped almonds, 3?4 cup chopped walnuts, 3?4 cup dried unsweetened apricots, and 3?4 cup raisins or dried cranberries.
Cooking Method: Grease a baking pan with cooking spray and preheat the oven to 350 F. Take a mixing, add mashed bananas in it then add eggs and canola oil in it and keep whisking the mixture. Add baking powder, salt and oat flour in the mixture and stir all the ingredients until combined. Now, add raisins, almonds, walnuts, and apricots in it. Pour the batter in the pan and bake for 25-30 minutes.
